7.5 Conclusões Finais

Este projeto de investigação permite reforçar a ligação entre a nostalgia e os alimentos, e que esta questão deverá ser encarada tanto por académicos como pelos

148 gestores/organizadores de eventos, como um fator/elemento atrativo para o desenvolvimento do turismo regional/local; por outro lado, a importância dada à gastronomia no contexto de eventos e que se deve ter em conta os segmentos de mercado aos quais os organizadores se podem orientar, também, para além do doméstico.

A investigação partiu de uma abordagem multidisciplinar do construto alimentos e da sua ligação com a nostalgia. Para tal, tendo em consideração a importância dessa pluridisciplinaridade.

Aquando da revisão de literatura dos construtos nostalgia e alimentos foi verificado a influência da biologia, isto é: da nutrição, da dieta, das propriedades físicas (olfato, paladar e tato), da influência dos estados psicossomáticos na alimentação das pessoas.

Mas também existe uma forte componente de psicologia, isto porque os alimentos proporcionam uma experiência que é subjetiva (uma experiência hedónica), o próprio estado de humor vai influenciar o tipo de alimentos que ingerimos e mesmo até a sua frequência.

Também a cultura tem uma influência preponderante na escolha dos alimentos, mas também na forma como sentem a nostalgia, isto é, o ritual, as cerimónias, o ciclo de vida em que se encontra, a herança e tradições familiares/culturais, o significado simbólico atribuído aos alimentos e mesmo às refeições, e mesmo a forma como o conhecimento ligado aos alimentos é transmitido entre gerações (pois esse conhecimento vai ser determinante na construção do sentimento nostálgico).

A questão sócio-económico tem impacto também na escolha dos alimentos e do local de consumo e na nostalgia, isto porque vai depender da classe económica e social a que a pessoa pertence, dependendo também do papel social que desempenha no seio familiar.

O contexto e ambiente também influencia ambos os construtos, tendo em consideração a decoração, a aparência, o ambiente, a música e o próprio serviço em si.
