3 QUALIDADE DA CARNE DE BOVINOS NELORE ALIMENTADOS

3.4 CONCLUSÃO

A utilização de 30% caroço de algodão na MS da dieta de bovinos de corte mostrou ser uma ótima alternativa para melhorar as características físico-químicas da carne, principalmente maciez, que é um dos atributos mais desejáveis entre os consumidores, além de contribuir para um perfil de ácidos graxos na carne menos saturado, aumentando os teores de 18:2 n6, 18:3 n3 e 18:2 não conjugados, sem comprometer a estabilidade lipídica da carne. No entanto, em relação a proporção n6/n3 da carne, este ingrediente se mostra inapropriado.

A inclusão de 500 UI de vitamina E na dieta contendo caroço de algodão não foi eficaz para apresentar melhorias das características avaliadas na carne, além de não promover o efeito antioxidante esperado.

Os animais que permaneceram em confinamento por 104 e 111 dias tiveram maior rendimento de carcaça e carnes mais macias. Por outro lado, ao aumentar os dias de confinamento, a carne mostrou-se o menos saudável do ponto de vista de alimento para o consumidor, já que apresentou maiores concentrações de saturados e menores de poli- insaturados, além de ter aumentado a proporção n6/n3.
