4 RESULTADOS E DISCUSSÃO

O sinal + indica positividade para Campylobacter spp.

Dos 45 animais avaliados, 32 (71%) apresentaram contaminação na carcaça ou linfonodos em pelo menos um dos pontos avaliados no processo de abate. A positividade para Campylobacter spp nas fezes dos animais vivos, tanto na granja quanto na pocilga de espera, independente do lote coletado (A, B e C) foi relacionada à positividade nas carcaças.

O resultado deste estudo alerta para a importância da infecção no animal vivo na contaminação da carcaça e reforça a necessidade de medidas de biossegurança na granja, do acompanhamento médico veterinário aos rebanhos e cuidados na higiene das instalações.

O alto percentual de positividade dos lotes avaliados demonstra que suínos são um importante reservatório para Campylobacter spp., concordando com estudos de HARVEY e colaboradores (2001) e STEINHAUSEROVA e colaboradores (2005). Demonstra também que pode ser uma via para infecção em humanos que manejam os animais nas granjas, manipulam as carcaças no frigorífico ou consomem a carne produzida sem cozimento adequado.

5 CONCLUSÃO

. A positividade para Campylobacter spp. nos animais vivos em fase de terminação é um fator de risco para a contaminação de carcaças durante o processo de abate e aumenta o perigo de infecções aos humanos por meio do consumo da carne.

O estresse ao qual os suínos são submetidos durante o transporte influenciou significativamente o aumento dos índices de isolamento de

Campylobacter spp.

Os procedimentos de manipulação durante o abate reduzem significativamente os índices de positividade de Campylobacter spp., mas não são suficientes para eliminar o microrganismo das carcaças.
