Joaquim Silva Guerreiro, Chef Executivo de Cozinha, de 51 anos, é natural de Odemira no Alentejo e faz parte da equipa do resort, desde a sua abertura em 1992.

O prato que esteve sempre presente na minha vida e que marca as ocasiões mais especiais, é o bacalhau com broa. Para os nossos hóspedes recomendo, sem qualquer dúvida, o famoso e delicioso arroz de marisco.

A minha rotina enquanto Chef de cozinha é bastante exaustiva mas, quando se faz algo que se gosta, tudo se torna mais fácil. Aposto na criação de pratos inovadores com textura e sabores únicos e procuro sempre os produtos mais frescos da região.

Momento mais marcante no Pine Cliffs Resort

Recordo-me de vários momentos que me marcaram enquanto Chef aqui no Pine Cliffs Resort. Uma vez, no Pescador, um hóspede pediu ao filho pequeno para ir à cozinha entregar-me um ramo de flores com um cartão de agradecimento pelo serviço prestado. Esse momento deixou-me muito feliz e agradecido pelo reconhecimento. Durante o meu percurso profissional estive duas vezes em Marrocos a representar o Pine Cliffs Resort e a cozinha portuguesa. Na minha primeira visita a Marrocos, fui logo destacado e ganhei o primeiro lugar no concurso de cozinha portuguesa.

Prato mais curioso que alguma vez confeccionou

No ano passado no Algarve Chefs Week fui responsável por cozinhar uma cataplana gigante que teve um enorme sucesso, num evento no Mercado de Loulé, com cerca de 1500 pessoas.

The 51 year old, Joaquim Silva Guerreiro, grew up in Odemira in the Alentejo region of Portugal and has been at Pine Cliffs Resort since its opening, in 1992.

Favorite dish

The dish that has always been present in my life and that marks the most special occasions is codfish with broa. For our guests I recommend the famous and delicious seafood rice.

Daily Routine

My daily routine as a chef is quite varied but when you do something you like, everything becomes a lot easier. I love to create innovative dishes with unique textures and flavors, always looking for the freshest products of the region.

Most special occasion at Pine Cliffs Resort

I remember several moments that marked my time as a Chef at Pine Cliffs Resort. Once at Pescador restaurant a guest asked his little son to go to the kitchen to deliver me a bouquet of flowers with a “thank you card”, which was very emotional and happy moment for me. In my professional career I was twice in Morocco representing Pine Cliffs Resort and the Portuguese cuisine.

On my first visit to Morocco I was soon highlighted, claiming the first place in the Portuguese cuisine contest.

The most unusual dish ever created

Last year at Algarve Chefs Week I was responsible for cooking a giant cataplana, which had a huge success in an event at Loulé Market with more than 1500 people.
