Da História desta casa...
Fundada nos finais do séc. XVIII, em 1796, é hoje o estabelecimento de restauração mais antigo da cidade. Criado para a confecção e comercialização das famosas “Frigideiras”, permanece o único baluarte desta deliciosa iguaria regional, que ainda hoje é confeccionada de acordo com a receita de antigamente. Um tratado de gastronomia artesanal que a casa se orgulha de manter viva, para delícia de todos os visitantes, os de agora e os de outrora, como os ilustres Júlio Dinis e Camilo Castelo-Branco, reputados escritores portugueses que decidiram eternizar o delícioso pastel nas páginas dos seus livros.
Em 1997, aquando de uma obra para remodelação do estabelecimento, o destino entendeu reforçar o estatuto histórico ímpar desta casa, unindo o séc. XVIII à época romana, da qual restam as ruínas de uma Domus, que descansam hoje por baixo de onde servimos os nossos clientes, que as podem ver e admirar através da estrutura em vidro construída para o efeito.
Em 2000, ano em que se comemorou o Bimilenário da cidade de Braga, as Frigideiras do Cantinho entenderam assinalar a data e honrar parte da sua herança com o lançamento do
“Bolo Romano”, produto único e exclusivo da casa, adaptado de um antigo tratado
gastronómico da autoria de Marco Gavius Apício, famoso escritor e gastrónomo do séc I d.C.
Tendo construído a sua reputação de tradição e qualidade ao longo de mais de 220 anos que atravessaram eras e séculos distintos, o mundo e a sociedade mudaram muito, mas não o compromisso da casa em honrar as receitas do passado que deleitaram gerações atrás de gerações. O que seria das frigideiras, dos sameirinhos, das tíbias ou dos doces conventuais, o que seria da identididade cultural de cada povo e região, se as melhores heranças do passado não fossem preservadas?
Founded in the end of the XVIII century, in 1796, it is today the oldest restaurant business in the city. Created for making and selling the famous “Frigideiras”, it remains the only bastion of this delicious regional specialty, wich is still today manufactured according to the old recipy. A treaty of gastronomic craftsmanship that this house is proud to keep alive for the delight of all its visitors, those of now and those of old times, like Júlio Dinis and Camilo Castelo-Branco, famous portuguese writers, that decided to enternalize the delicous pastry in the pages of their books.
In 1997, when the house was being renovated, fate decided to deepen the historical statute of the house, uniting the XVIII to the roman times, from wich remains the ruins of a Domus that rest today beneath the place in wich we serve our customers, that can see and admire them through a glass structure built for the purpose. In 2000, year in wich the 2000 years of the city of Braga were being celebrated, Frigideiras do Cantinho decided to introduce “Bolo Romano”- Roman Cake, a unique and exclusive product of this house, adapted from an ancient gastronomy treaty autored by Marcus Gavius Apicius, famous roman writer and gastronomer of Ist century AD.
Having built its reputation of tradition and quality for more than 220 years that endured through different ages and centuries, the world and society have changed a great deal, but not this house's commitment of honouring the recipes from the past that delighted generations after generations. What would have happened to frigideiras, sameirinhos, tíbias and typical sweet speciality?What would have happened to each people and region cutural's identity, if the best legacies of the past were not preserved?
