1. MERCADO NACIONAL / DOMESTIC MARKET

1.1 EFECTIVO / HERD

Em 2008 o efectivo bovino nacional atingiu 1 439 000 animais, apresentando, relativamente ao ano anterior, uma pequena redução (-0.2 %). Por categorias, a evolução foi distinta, assim, enquanto os animais de <1 ano sofreram uma quebra acentuada (-21 000 cabeças), os animais de 1 a 2 anos apresentaram uma progressão (+16 000 cabeças). Também os animais adultos apresentaram um ligeiro acréscimo (+2 000 cabeças), no entanto, dentro deste grupo os machos e as novilhas pautaram-se pela ligeira recuperação, as vacas sofreram uma ligeira redução, nomeadamente as vacas leiteiras, -5 000 cabeças, já que as aleitantes apresentaram um pequeno aumento, +1 000 cabeças. Em 2007, do total de animais, 50.4 % são vacas e 25.8 % têm menos de 1 ano. Das vacas, 58.5 % são aleitantes.

A principal região produtora é o Alentejo, com 36.6 % do efectivo em 2008. Seguem-se-lhe o Entre-Douro-e-Minho (18.4 %), os Açores (16.8 %) e o Ribatejo e Oeste (10.8 %). Relativamente ao ano anterior, o efectivo apenas recuperou na Beira Interior (+3 000 cabeças), nos Açores e na Madeira (+2 000 cabeças, em ambos os casos). Os decréscimos mais significativos ocorreram no Ribatejo e Oeste (-4 000 cabeças), no Alentejo e na Beira Litoral (-3 000 cabeças, em ambas as regiões).

No Norte do país e nos Açores predominam as raças de aptidão leite, enquanto no Alentejo têm maior peso as raças de aptidão carne. Deste modo, na Beira Litoral do efectivo total de vacas, cerca de 85.7 % são leiteiras, nos Açores são 80.2 % e no Entre-Douro-e-Minho 76.2 %. Pelo contrário, no Alentejo 93.0 % das vacas são aleitantes, enquanto no Algarve esta percentagem é de cerca de 100 %, na Beira Interior de 73.3 % e em Trás-os-Montes de 68.6 %.

In 2008, the Portuguese cattle herd reached 1.439 million heads, a slight decrease (-0.2%) from the previous year. Changes differed by category: <1 year old animals experienced a sharp decline (-21000 heads) while 1-2 year old animals showed an increase (+16 000 head). Adult animals also showed a slight increase (+2 000 heads), but within this group males and heifers recovered slightly whereas cows suffered a slight reduction, particularly dairy cows, -5 000 heads; suckler cows showed a small increase, +1 000 heads. In 2007, of the total number of animals, 50.4% were cows and 25.8% were less than 1-year old, while 58.5% of cows were suckler cows.

The main production area is the Alentejo, with 36.6% of the cattle herd in 2008, followed by Entre-Douro-e-Minho (18.4%), the Azores (16.8%) and Ribatejo e Oeste (10.8%). As compared to the previous year, the herd has recovered only in Beira Interior (+3 000 heads), the Azores and Madeira (+2 000 heads, in both cases). The most significant decreases occurred in Ribatejo e Oeste (-4 000 heads), the Alentejo and Beira Litoral (-3 000 heads, in both regions).

In the north of the country and the Azores, dairy breeds predominate, while in the Alentejo beef breeds are most prevalent. Thus, in Beira Litoral, of the total cow herd, about 85.7% are dairy cows, in the Azores that proportion is 80.2% and in Entre-Douro-e-Minho 76.2%. By contrast, in the Alentejo 93.0% are suckler cows, whereas in the Algarve this percentage is close to 100%, in Beira Interior 73.3% and in Trás-os-Montes 68.6%.

Em 2008 os abates de bovinos aprovados para consumo atingiram 108 540 toneladas e 449 442 cabeças, registando-se assim um aumento de +19.9 % cabeças e de +19.0 % toneladas em relação ao ano anterior. Pelo contrário, em 2007 tinha ocorrido uma quebra de -14.6 % cabeças e de -13.3 % toneladas. O valor mais elevado dos últimos anos observou-se em 2005 com 480 684 cabeças. O peso médio de uma carcaça de bovino em 2008 foi de 241.5 Kg, valor inferior ao do ano anterior (243.5 Kg), mas superior ao de 2005 (239.8 Kg). Em 2008 apenas as vacas apresentaram um decréscimo do peso médio (-2.9 %); o maior acréscimo registou-se para os vitelos (+7.3 %).

A principal categoria abatida foi a dos novilhos, que representaram por si só mais de metade (54.5 %) do volume total de abate (54.7 % em 2007). A 2ª posição foi ocupada pelos vitelos/as (19.4 %), aparecendo logo a seguir as vacas (12.8 %) e as novilhas (12.2 %). De referir que em 2007 os vitelos/as ocupavam apenas a 4ª posição, com 13.7 %, sendo ultrapassados pelas vacas (15.3 %) e pelas novilhas (15.2 %).

A evolução do abate por categorias em relação ao ano anterior revela um aumento do número de animais de todas as categorias consideradas, com excepção das novilhas (-5.5 % em cabeças). Em toneladas, além das novilhas, também as vacas apresentam um ligeiro decréscimo (-0.7 %). De salientar o aumento acentuado registado pelos vitelos/as (+68.3 % toneladas), mas também pelos novilhos (+18.6 %) e bois (+16.7 %).

A evolução mensal dos abates revela que a produção em 2008 foi sempre superior à do ano anterior, particularmente em Setembro (+46.7 %), Junho (+30.6 % e em Novembro e Dezembro, com acréscimos superiores a 20 %.

A análise dos abates por região revela a primazia do Entre-Douro-e-Minho, com 35.8 % do número de cabeças abatidas em 2008 e 32.7 % do volume de carne correspondente (sendo os valores homólogos em 2007 de 39.6 e 35.2 %, respectivamente). Em segundo lugar aparece o Ribatejo e Oeste com 26.7 % do número de cabeças abatidas e 29.8 % da tonelagem. A terceira posição é ocupada pela Beira Litoral (10.5 % e 11.8 %, respectivamente) e a quarta pelos Açores (9.8 e 9.6 %), que ultrapassam o Alentejo (7.2 %, em ambos os casos), nos dois últimos anos. A evolução regional dos abates em relação ao ano anterior foi negativa apenas em Trás-os-Montes (-1.1 %) e no Algarve, uma vez que o matadouro Magarb SA foi encerrado pela ASAE em Julho de 2007. O maior aumento percentual ocorreu na Beira Interior (+62.2 % toneladas) e no Ribatejo e Oeste (+35.7 %).

In 2008, slaughter of bovine animals approved for human consumption reached 108 540 tonnes and 449 442 heads, a +19.9% increase in heads and +19.0% in tonnes from the previous year. By contrast, in 2007 there had been a -14.6% decrease in heads and -13.3% in tonnes. Recent year figures peaked in 2005 at 480 684 heads.

The average weight of a beef carcass in 2008 was 241.5 kg, down from the previous year (243.5 kg) but up from 2005 (239.8 kg). Only cows showed a decrease in average weight (-2.9%); the largest weight increase was recorded for calves (+7.3%).

The main category slaughtered was that of steers, which alone accounted for more than half (54.5%) of the total slaughtered volume (54.7% in 2007). Calves were second (19.4%), followed by cows (12.8%) and heifers (12.2%). It should be noted that in 2007 calves occupied the 4th position with 13.7%, being surpassed by both cows (15.3%) and heifers (15.2%).

Changes from the previous year in slaughters by category show an increase in the number of animals slaughtered for all categories considered, except heifers (-5.5% in heads). In tonnes, in addition to heifers, cows also experienced a slight decrease (-0.7%). The sharp increase not only in calves (+68.3% tonnes) but also in steers (+18.6%) and bullocks (+16.7%) is quite striking.

8 Monthly changes in slaughters show that production in 2008 was always higher than in the previous year, particularly in September (+46.7%), June (+30.6%), November and December, both with increases above 20%.

Entre-Douro-e-Minho leads slaughters by region, with 35.8% of the total number of slaughtered heads in 2008 and 32.7% of the corresponding volume of meat (39.6% and 35.2% respectively in 2007). Ribatejo e Oeste is second with 26.7% of the number of slaughtered heads and 29.8% of the volume. Beira Litoral follows (10.5% and 11.8% respectively) and the Azores is fourth (9.8% and 9.6%), ahead of the Alentejo (7.2% in both cases) in the last two years. Changes in regional slaughters from the previous year were only negative in Trás-os-Montes (-1.1%) and in the Algarve, since the Magarb SA slaughterhouse was closed by the Portuguese Economic and Food Safety Authority (ASAE) in July 2007. The largest percentage increase occurred in Beira Interior (+62.2% tonnes) and in Ribatejo e Oeste (+35.7%).

12 1.3. ABATES CLASSIFICADOS / CLASSIFIED CARCASSES

Em 2008, os abates classificados de bovinos adultos apresentaram uma recuperação (+10.1 %, toneladas) relativamente ao ano anterior. No que se refere aos bovinos leves, o acréscimo foi muito mais significativo (+70.7 %), o que dá um aumento de +18.4 % para o total de abates classificados (em toneladas). No que se refere aos bovinos leves, foi a categoria das vitelas (LA) que registou o acréscimo mais significativo, +316.9 % toneladas. No caso dos bovinos adultos, ocorreram reduções nas categorias dos bois (-9.0 % toneladas) e das novilhas (-7.7 %); o maior acréscimo foi dos outros machos não castrados (+39.1 %) e dos novilhos (+16.6 %).

A classificação de carcaças de bovinos adultos, segundo a grelha Comunitária SEUROP, continuou a indicar a prevalência da classe R (conformação boa) com 36.3 % do total de cabeças.Seguiam-se as classes O (conformação razoável) e U (conformação boa) e P (conformação medíocre) com 28.2, 16.9 e 16.4 %, respectivamente. Relativamente ao estado de gordura das carcaças, a classe “2” (gordura fraca), a mais desejável, reforçou o seu domínio (66.7 %).

Nos novilhos (categoria A), prevaleceu a classe R (40.6 % do total), nos machos não castrados com mais de 2 anos (categoria B), a classe O (46.8 %) foi a mais importante, nos machos castrados ou bois (categoria C) a classe mais representativa também foi a O (49.9 %), nas vacas (categoria D) a conformação era predominantemente medíocre (classe P representa 62.1 %) e finalmente nas novilhas (categoria E) a mais importante foi a classe R (52.5 %).

A região Norte foi responsável pelo abate de 41.6 % do número total de bovinos abatidos classificados em 2008. Nos bovinos adultos a sua representatividade foi de 34.7 % e nos bovinos leves de 55.8 %. Esta região foi responsável pelo abate de 48.1 % das vitelas (LA) e 61.6 % dos vitelões (LO), a nível nacional. Esta região apresentou em 2008 uma grande quebra da sua importância ao nível do abate de bovinos leves, já que em 2007 a sua representatividade neste grupo era de 76.0 %, abatendo 89.4 % das vitelas (LA) e 72.7 % dos vitelões (LO) a nível nacional. A segunda região mais importante é Lisboa e Vale do Tejo com uma representatividade de 26.5 %, no entanto, a maioria dos abates aqui realizados, 76.7 %, corresponde a bovinos adultos (90.4 % em 2007).

In 2008, the slaughtering of classified bovine adult animals showed a recovery (+10.1% in tonnes) over the previous year. With regard to light cattle, the increase was much more significant (+70.7%), resulting in a +18.4% increase for total slaughtering of classified animals (in tonnes). Still regarding light cattle, the category female calves (LA) increased the most, +316.9% in tonnes. In the case of adult cattle, reductions occurred for bullocks (-9.0% tonnes) and heifers (-7.7%); the largest increase was for other uncastrated male animals (+39.1%) and steers (+16.6%).

The classification of adult bovine carcasses according to the SEUROP grid continued to indicate the prevalence of class R (good conformation) with 36.3% of all heads. Next were class O (moderate conformation), U (very good conformation), and P (poor conformation) with 28.2%, 16.9% and 16.4% respectively. With regard to carcass fat, class 2 (light fat), the most wanted one, continues to lead (66.7%).

As for steers (category A), class R prevailed (40.6% of the total), while for uncastrated male animals over 2 years old (category B), class O was the most important one (46.8%). For castrated male animals or bullocks (Category C), O was also the most relevant class (49.9%), whereas for cows (category D) the predominant conformation was poor (class P accounted for 62.1%) and for heifers (category E) the most important class was R (52.5%).

The Norte region was responsible for the slaughter of 41.6% of the total number of classified bovine animals slaughtered in 2008. For adult cattle, it accounted for 34.7% and for light cattle, 55.8%.
